Grandma's
Potato Pancakes
Ingredients:

6 medium size potatoes, pared
•
1 medium size onion, grated
• 2
eggs
• 1
teaspoon of salt
• 1/4
teaspoon of pepper
• 3
tablespoons of flour
• 2
tablespoons of parsley, chopped
• butter or margarine
Directions:
• Step
1: Grate potatoes on fine grater into bowl; drain very well.
• Step
2: Add onion, eggs, salt, pepper, flour, and parsley; mix well.
• Step
3: Heat 2 to 2 tablespoons of butter or margarine in large skillet.
• Step
4: Drop potato mixture by heaping tablespoonfuls into hot fat (Grandma's word).
• Step
5: Fry until golden brown on bottom; turn and brown second side, adding more fat
(butter?) as needed.
• Step
6: Drain on paper towels.
Serving:
Pancakes
may be served as a vegetable with meats or as a luncheon or supper dish
accompanied with applesauce or dairy sour cream.
Makes 12 to
14 pancakes.
